What is your source for cocoa being 40% of COGS for a typical chocolate manufacturer, please? I guess it could be cross checked (well as a % retail price) with typical grams of cocoa per 100g of finished product, then making assumptions about the commodity cost vs the shipping / processing / etc costs from your “piece of the chocolate bar” image or from Barry Callebaut’s numbers.

That particular number came from Lindt. Though I recognize that Lindt probably pays more for cocoa and less for sugar compared to mass market brands. Didn't Delfi say that cocoa represented 25% of COGS? Let me think about these numbers

Delfi COGS is a mix of chocolate and the third-party brands so who on earth knows what it means. And I don't recall them saying that number.
